As part of our culinary team, we are seeking a skilled and experienced North Indian Cook to lead our North Indian kitchen and delight our guests with delicious and authentic North Indian dishes.You will utilize your culinary expertise, creativity, and knowledge of North Indian cuisine to create delicious and authentic dishes that satisfy our guests' cravings and uphold our restaurant's reputation for excellence. Responsibilities: Plan, prepare, and cook a wide range of North Indian dishes, including vegetarian and non-vegetarian curries, kebabs, tandoori specialties, biryanis, bread (roti, naan, paratha), and desserts. Ensure the freshness, quality, and authenticity of ingredients used in food preparation, including spices, herbs, vegetables, meats, and dairy products. Follow traditional North Indian recipes, cooking techniques, and flavor profiles to achieve authentic flavors, aromas, and textures in dishes. Coordinate with the kitchen team to plan menus, develop recipes, and manage inventory of North Indian ingredients, supplies, and equipment. Maintain cleanliness and sanitation in the North Indian kitchen, including food preparation areas, cooking equipment, utensils, and storage areas, in compliance with health and safety regulations. Monitor cooking times and temperatures, adjust heat levels, and use cooking equipment efficiently to ensure food is cooked to perfection. Plate and garnish dishes attractively, using traditional serving vessels and garnishes, and ensure proper portion sizes and presentation standards. Assist in food preparation tasks, such as marinating meats, preparing spice blends, and chopping vegetables, as needed. Adhere to food safety protocols, including proper handling, storage, and disposal of perishable items, and maintain hygiene standards in food handling and preparation. Collaborate with the restaurant management team to develop new menu items, special dishes, and promotions to enhance the dining experience for guests. Follow kitchen schedules, production plans, and service timelines to ensure timely delivery of food orders and minimize wait times for guests. Train and mentor junior kitchen staff on North Indian cooking techniques, recipes, and food safety practices. Communicate effectively with kitchen colleagues, servers, and management to coordinate food preparation, service, and guest satisfaction. Stay updated on industry trends, new ingredients, and cooking techniques in North Indian cuisine, and incorporate innovative ideas into menu development and culinary offerings. Requirements: Proven experience (X years) as a North Indian Cook or in a similar role, with expertise in preparing and cooking North Indian cuisine. Thorough knowledge of North Indian cooking techniques, ingredients, spices, and flavor profiles, with the ability to create authentic and delicious dishes. Strong culinary skills, including knife skills, food preparation techniques, and cooking methods specific to North Indian cuisine. Creativity and passion for food, with the ability to innovate and develop new recipes while maintaining authenticity and tradition. Excellent organizational and time management skills, with the ability to prioritize tasks and manage multiple responsibilities in a fast-paced kitchen environment. Attention to detail and commitment to quality, with a focus on delivering exceptional flavors, textures, and presentations in every dish. Ability to work collaboratively as part of a kitchen team, communicate effectively, and maintain professionalism under pressure. Knowledge of food safety regulations, sanitation standards, and kitchen hygiene practices. Flexibility to work shifts, including evenings, weekends, and holidays, as required. Fluency in Malayalam; proficiency in English or other languages is an advantage. Formal culinary training or certification from a recognized culinary school is preferred.
