As part of our culinary team, we are seeking a talented and experienced South Indian Chef who shares our passion for culinary excellence and can lead our kitchen in creating memorable dining experiences. You will utilize your culinary expertise, creativity, and knowledge of South Indian cuisine to develop innovative menus, ensure food quality and consistency, and exceed guest expectations. Responsibilities: Plan, develop, and execute menus featuring a variety of South Indian dishes, including dosas, idlis, vadas, curries, rice dishes, and desserts. Lead and manage the kitchen team, including cooks, sous chefs, and kitchen assistants, in food preparation, cooking, and plating of dishes. Train and mentor kitchen staff on South Indian cooking techniques, recipes, presentation standards, and food safety protocols. Source high-quality ingredients, spices, and seasonings for South Indian cuisine, ensuring freshness, authenticity, and flavor integrity. Monitor kitchen operations to maintain cleanliness, organization, and compliance with health and safety regulations and sanitation standards. Coordinate with restaurant management and front-of-house staff to plan menus, specials, and promotions and ensure smooth service operations. Oversee food preparation processes, including cutting, marinating, seasoning, and cooking, to achieve optimal flavors, textures, and presentations. Taste and evaluate dishes for quality, flavor, and consistency, making adjustments as needed to meet culinary standards and guest preferences. Manage kitchen inventory, including stock levels, ordering, receiving, and storage of ingredients, supplies, and equipment. Ensure proper handling, storage, and disposal of perishable items, leftovers, and kitchen waste, minimizing food waste and maximizing efficiency. Monitor kitchen equipment and appliances for functionality, cleanliness, and maintenance needs, coordinating repairs or replacements as necessary. Collaborate with restaurant management on budgeting, cost control, and profitability goals for the kitchen department. Stay updated on culinary trends, techniques, and ingredients in South Indian cuisine, incorporating innovative ideas into menu development and culinary offerings. Provide leadership, motivation, and support to kitchen staff, fostering teamwork, communication, and a positive work environment. Uphold the reputation and integrity of the restaurant by delivering exceptional food quality, service, and guest satisfaction. Requirements: Diploma or degree in Culinary Arts, Hotel Management, or a related field. Proven experience (X years) as a Chef specializing in South Indian cuisine, with a track record of culinary excellence and leadership in a restaurant setting. In-depth knowledge of South Indian culinary traditions, ingredients, spices, cooking techniques, and regional variations. Strong culinary skills, including knife skills, food preparation techniques, and cooking methods specific to South Indian cuisine. Creativity and innovation in menu development, recipe creation, and presentation of dishes. Excellent leadership and management skills, with the ability to motivate, train, and supervise kitchen staff effectively. Commitment to quality, consistency, and food safety, with attention to detail and adherence to sanitation standards. Ability to work under pressure in a fast-paced environment, prioritize tasks, and manage multiple responsibilities simultaneously. Excellent communication and interpersonal skills, with the ability to collaborate with colleagues, interact with guests, and provide exceptional service. Flexibility to work shifts, including evenings, weekends, and holidays, as required. Fluency in Malayalam and proficiency in English; knowledge of other languages is an advantage.
