Responsibilities: Prepare shawarma dishes according to traditional recipes and culinary standards, ensuring authenticity and flavor consistency. Marinate meats, typically chicken, beef, or lamb, with a blend of spices, herbs, yogurt, and other seasonings to enhance flavor and tenderness. Skewer marinated meats onto vertical rotisserie spits, arranging them in layers for cooking, and rotating slowly over heat sources to cook evenly and develop a crisp, golden-brown exterior. Slice cooked shawarma meat thinly and assemble sandwiches or wraps with pita bread, flatbread, or tortillas, adding a variety of toppings such as lettuce, tomatoes, onions, pickles, and sauces such as tahini, garlic sauce, or hummus. Proficiency in operating vertical rotisserie machines, understanding temperature control, rotation speed, and cooking times to achieve optimal results.
