The Porotta Maker will be responsible for preparing high-quality porottas according to traditional recipes and culinary standards. This role requires expertise in dough preparation, rolling, and cooking techniques specific to porotta making. Responsibilities: Prepare porotta dough by mixing flour, water, salt, and other ingredients according to established recipes and proportions, ensuring consistency and quality. Knead and roll out porotta dough into thin, circular sheets using a rolling pin, stretching and folding the dough to create multiple layers and achieve desired thickness. Cook porottas on a hot griddle or tawa, flipping and turning them regularly to ensure even cooking and achieve a golden brown color with flaky layers. Monitor cooking temperatures and adjust heat settings as needed to prevent burning or undercooking of porottas, maintaining optimal cooking conditions. Apply oil or ghee to porottas during cooking to enhance flavor, moisture, and texture, brushing or drizzling oil evenly over the surface of each porotta. Stack cooked porottas neatly and maintain them in a warm, covered container to preserve freshness and warmth until served to customers. Coordinate with kitchen staff and other culinary team members to ensure timely preparation and service of porottas, communicating any special orders or customer preferences. Clean and maintain porotta-making equipment, including griddles, rolling pins, and dough preparation surfaces, ensuring hygiene and sanitation standards are met.
