As a South Indian Cook in Thrissur, your primary responsibility is to prepare and cook authentic South Indian dishes with precision, consistency, and adherence to traditional recipes. You will play a pivotal role in maintaining the culinary standards of the establishment and ensuring customer satisfaction with the quality and taste of the food. Key Responsibilities: Menu Planning: Collaborate with management to plan menus featuring a variety of South Indian dishes, including breakfast items, snacks, curries, rice dishes, and desserts. Recipe Preparation: Prepare ingredients, spices, and condiments required for cooking South Indian dishes, following traditional recipes and portion sizes. Cooking: Cook South Indian dishes using appropriate cooking techniques, such as tempering, sautéing, frying, steaming, and grilling, to enhance flavor and texture. Dosa and Idli Making: Prepare dosas, idlis, vadas, and other South Indian breakfast items using batter made from rice, lentils, and other ingredients, ensuring proper fermentation and consistency. Curry and Gravy Preparation: Prepare flavorful curries, gravies, and sauces using a variety of spices, herbs, and vegetables, and adjust seasoning and consistency as needed. Rice and Biriyani: Cook aromatic rice dishes, such as pulao, biriyani, and tamarind rice, with the perfect balance of spices and ingredients to achieve authentic South Indian flavors. Tiffin Items: Prepare tiffin items like upma, pongal, paniyaram, and appam, ensuring they are cooked to perfection and served hot and fresh. Chutneys and Accompaniments: Make a variety of chutneys, pickles, and accompaniments to complement South Indian dishes, balancing flavors and textures to enhance the dining experience. Plating and Presentation: Plate and garnish dishes attractively, paying attention to presentation and portion sizes, and ensure that all food leaving the kitchen meets quality and presentation standards. Kitchen Hygiene: Maintain cleanliness and hygiene in the kitchen area, including equipment, utensils, work surfaces, and storage areas, and adhere to food safety standards and regulations. Qualifications: Proven experience as a Cook specializing in South Indian cuisine in a restaurant, hotel, or culinary establishment. In-depth knowledge of South Indian culinary traditions, ingredients, spices, and cooking techniques. Proficiency in preparing a variety of South Indian dishes, including dosas, idlis, curries, rice dishes, and snacks. Ability to work efficiently in a fast-paced kitchen environment while maintaining attention to detail and quality. Strong organizational skills and ability to manage multiple tasks and prioritize workload effectively. Excellent taste and palate, with the ability to season and adjust flavors accurately. Knowledge of food safety and sanitation standards and willingness to adhere to hygiene guidelines. Effective communication skills and ability to work collaboratively in a team environment. Physical stamina and dexterity to stand, walk, lift, and carry kitchen equipment and ingredients. Formal culinary education or certification in South Indian cuisine is preferred but not mandatory.
