As a Porotta Maker at our restaurant in Palakkad, you will be responsible for preparing and cooking authentic Malabar-style porottas to meet the culinary standards and preferences of our customers. Your expertise in dough preparation, shaping, and cooking techniques will be essential in delivering high-quality porottas and ensuring customer satisfaction. Your duties will include but are not limited to: Dough Preparation: Prepare the porotta dough using the appropriate ingredients and proportions, following traditional recipes and techniques to achieve the desired texture, flavor, and elasticity. Dough Resting: Allow the porotta dough to rest for the required duration to ensure proper fermentation and gluten development, resulting in soft and fluffy porottas. Shaping: Divide the porotta dough into portions and shape them into round balls or discs using your hands or a rolling pin, ensuring uniform thickness and size for even cooking. Layering: Apply ghee or oil to the rolled-out porotta dough and fold it into multiple layers, creating flaky and crispy layers that are characteristic of Malabar-style porottas. Cooking: Cook the layered porotta on a hot griddle or tawa, flipping it multiple times and applying ghee or oil as needed, until both sides are golden brown and cooked through. Quality Control: Monitor the cooking process closely, adjusting temperature and cooking time as needed to ensure that porottas are cooked to perfection, with a crispy exterior and soft interior. Quantity Management: Estimate the demand for porottas based on customer orders and dining volume, and prepare the appropriate quantity of dough and porottas to meet customer expectations without excess wastage. Kitchen Hygiene: Maintain cleanliness and hygiene in the porotta-making area, including equipment, utensils, and work surfaces, to ensure food safety and compliance with health regulations. Collaboration: Coordinate with other kitchen staff, including cooks, chefs, and servers, to ensure timely preparation and serving of porottas, and communicate any special requests or customer feedback as needed. Requirements: Proven experience as a porotta maker or similar role, preferably in a restaurant or culinary establishment specializing in Kerala cuisine. Proficiency in preparing and shaping porotta dough, layering techniques, and cooking porottas on a tawa or griddle. Knowledge of traditional Malabar-style porotta recipes, ingredients, and cooking methods. Attention to detail and quality, with a commitment to delivering consistently high-quality porottas that meet customer expectations. Ability to work efficiently in a fast-paced kitchen environment, managing multiple tasks and orders simultaneously. Excellent communication and teamwork skills, with the ability to collaborate effectively with kitchen staff and other team members. Flexibility to work evenings, weekends, and holidays as required in the restaurant industry. Salary: Commensurate with experience.
