As a Chinese Chef at our restaurant in Palakkad, you will be responsible for overseeing the preparation and cooking of authentic Chinese cuisine dishes to meet the culinary standards and preferences of our customers. Your culinary expertise, leadership skills, and creativity will be essential in delivering high-quality dishes and ensuring customer satisfaction. Your duties will include but are not limited to: Menu Development: Lead the development and innovation of the Chinese cuisine menu, including creating new dishes, updating existing recipes, and incorporating seasonal ingredients and culinary trends to attract and retain customers. Food Preparation: Oversee the preparation and cooking of a wide range of Chinese dishes, including appetizers, soups, stir-fries, noodles, rice dishes, dim sum, and seafood specialties, ensuring authenticity, flavor, and consistency in every dish. Ingredient Selection: Source and select fresh and high-quality ingredients, herbs, and spices for Chinese cooking, and oversee their proper storage, handling, and portioning to maintain food safety and quality standards. Cooking Techniques: Demonstrate mastery of Chinese cooking techniques, such as stir-frying, steaming, braising, deep-frying, and roasting, and train kitchen staff on proper cooking methods, timing, and temperature control to achieve desired results. Food Presentation: Ensure that Chinese dishes are plated and presented in an aesthetically pleasing and appetizing manner, with attention to detail in garnishing, portioning, and arrangement to enhance visual appeal and customer satisfaction. Kitchen Management: Manage the overall operations of the Chinese kitchen, including staffing, scheduling, inventory management, equipment maintenance, and sanitation, to ensure smooth workflow and adherence to food safety standards. Quality Control: Maintain strict quality control measures throughout the cooking process, conducting taste tests, adjusting seasoning as needed, and ensuring that all dishes meet the restaurant's standards of taste, texture, and presentation. Team Leadership: Provide leadership and guidance to kitchen staff, including sous chefs, line cooks, and kitchen assistants, fostering a positive work environment, promoting teamwork, and motivating staff to achieve culinary excellence. Customer Interaction: Interact with customers to understand their preferences, accommodate special requests or dietary restrictions, and provide recommendations or suggestions on Chinese dishes to enhance their dining experience. Menu Promotion: Collaborate with the marketing team to develop marketing strategies and promotions to promote Chinese cuisine offerings, attract new customers, and increase sales and revenue. Requirements: Proven experience as a Chinese chef or head chef, preferably in a high-volume restaurant or fine dining establishment specializing in Chinese cuisine. Extensive knowledge of Chinese cooking techniques, ingredients, and regional cuisines, with a passion for authentic Chinese flavors and culinary traditions. Creative flair and innovation in developing new dishes, adapting traditional recipes, and incorporating modern twists to appeal to diverse tastes and preferences. Excellent leadership and management skills, with the ability to lead and inspire a team of kitchen staff, set clear expectations, and maintain high standards of performance and professionalism. Strong organizational and time management skills, with the ability to prioritize tasks, delegate responsibilities, and manage multiple priorities in a fast-paced kitchen environment. Knowledge of food safety and sanitation regulations, practices, and procedures, with a commitment to upholding the highest standards of cleanliness and hygiene in the kitchen. Culinary certification or diploma from a recognized culinary school is preferred. Flexibility to work evenings, weekends, and holidays as required in the restaurant industry. Salary: Commensurate with experience.
