We are seeking a skilled and experienced Al Fahm Maker to join our culinary team at our restaurant in Palakkad. As an Al Fahm Maker, you will be responsible for preparing and cooking delicious Al Fahm dishes, ensuring they meet our high standards of taste, quality, and presentation. This role requires expertise in Middle Eastern cuisine and a passion for creating flavorful dishes that delight our customers. Responsibilities: Prepare and marinate chicken, lamb, or beef for Al Fahm dishes, ensuring proper seasoning and flavor infusion. Cook Al Fahm dishes on the grill or in the oven, monitoring cooking times and temperatures to ensure even cooking and optimal flavor. Prepare and assemble accompaniments and side dishes, such as salads, sauces, and dips, to complement the Al Fahm dishes. Coordinate with other kitchen staff to ensure timely preparation and service of Al Fahm orders, maintaining consistency and quality. Ensure compliance with food safety and hygiene regulations, including proper handling, storage, and preparation of meat and other ingredients. Maintain cleanliness and organization of the grill station, equipment, and utensils. Train and mentor kitchen staff on Al Fahm cooking techniques, recipes, and presentation standards. Collaborate with the restaurant management team to develop new Al Fahm dishes, specials, and promotions. Stay updated on current trends and innovations in Middle Eastern cuisine, and incorporate new ideas into menu development and presentation. Handle any grill-related issues or emergencies that may arise, ensuring efficient resolution and minimal disruption to service. Perform administrative tasks, such as inventory management, scheduling, and cost control, to optimize grill station operations. Requirements: Proven experience as an Al Fahm Maker or Grill Chef, preferably in a Middle Eastern restaurant or hotel. Strong knowledge of Middle Eastern culinary traditions, ingredients, and cooking techniques, especially in grilling. Creativity and passion for creating flavorful and authentic Al Fahm dishes. Excellent grilling skills, with the ability to cook meats to perfection and achieve desired levels of char and smokiness. Strong organizational and multitasking abilities, with attention to detail. Flexibility to work evenings, weekends, and holidays as required. Fluent in Malayalam; proficiency in English is an advantage. Certification or training in culinary arts and food safety and sanitation practices. Strong communication and interpersonal skills, with the ability to work collaboratively with other team members. Physical stamina and ability to work in a fast-paced environment, including standing for extended periods and lifting heavy objects.
