We are currently seeking a skilled Porotta Maker to join our culinary team in Vadakara. The Porotta Maker will be responsible for preparing high-quality porottas according to established recipes and standards. This role requires precision, efficiency, and a dedication to delivering delicious and authentic Kerala cuisine to our customers. Responsibilities: Prepare porotta dough by accurately measuring and mixing ingredients according to the recipe. Knead and stretch the dough to achieve the desired texture and elasticity. Use a rolling pin to flatten the dough into thin, round shapes, ensuring uniform thickness. Cook porottas on a hot griddle or tawa, adjusting heat and flipping as needed to achieve even cooking. Monitor cooking times and appearance to ensure porottas are cooked to perfection, with a golden brown color and flaky texture. Brush cooked porottas with ghee or oil to enhance flavor and appearance. Stack and serve porottas in an attractive manner, maintaining presentation standards. Clean and maintain cooking equipment, including griddles, rolling pins, and utensils, to ensure hygiene and safety standards are met. Adhere strictly to food safety regulations and guidelines, maintaining a clean and sanitary work environment at all times. Collaborate with kitchen staff to coordinate food preparation and ensure timely service during peak hours. Assist in inventory management by monitoring ingredient levels and communicating replenishment needs to the kitchen supervisor. Provide friendly and courteous service to customers, addressing any inquiries or special requests related to porottas. Requirements: Proven experience as a Porotta Maker or similar role in a restaurant, hotel, or food service establishment. In-depth knowledge of porotta preparation techniques, including dough preparation, rolling, and cooking. Ability to work efficiently and accurately in a fast-paced kitchen environment. Attention to detail and precision in executing porotta-making tasks, ensuring consistent quality. Physical stamina to stand for extended periods and perform repetitive tasks. Thorough understanding of food safety standards and practices. Excellent communication and teamwork skills. Flexibility to work shifts, including evenings, weekends, and holidays. Basic math skills for measuring ingredients and calculating cooking times. Fluency in Malayalam is preferred; proficiency in English is a plus.
