We are currently seeking an experienced and creative Chinese Chef to lead our culinary team in Kozhikode. As a Chinese Chef, you will be responsible for designing innovative Chinese menus, overseeing kitchen operations, and ensuring the highest standards of food quality and presentation. Responsibilities: Menu Development: Design and develop creative and diverse Chinese menus that showcase traditional and contemporary dishes. Incorporate seasonal ingredients, culinary trends, and customer preferences into menu planning. Recipe Creation: Create and refine recipes for a variety of Chinese dishes, including appetizers, main courses, soups, noodles, rice dishes, and desserts. Experiment with flavors, textures, and presentation techniques to enhance dining experiences. Ingredient Sourcing: Source and select high-quality ingredients for Chinese cooking, including fresh produce, meats, seafood, spices, and specialty ingredients. Establish relationships with local suppliers and vendors to ensure consistent quality and availability. Culinary Techniques: Demonstrate expertise in Chinese cooking techniques, such as stir-frying, steaming, braising, roasting, and deep-frying. Train and mentor kitchen staff in proper cooking methods and execution of recipes. Quality Control: Ensure strict adherence to quality standards and recipe specifications in food preparation and presentation. Conduct regular tastings and quality checks to maintain consistency and excellence in culinary offerings. Kitchen Management: Oversee all aspects of kitchen operations, including food preparation, cooking, plating, and sanitation. Manage kitchen staff schedules, tasks, and performance to ensure smooth workflow and timely service. Food Safety and Hygiene: Enforce strict compliance with food safety and sanitation regulations, including proper handling, storage, and disposal of food items. Maintain a clean and organized kitchen environment at all times. Inventory Management: Monitor inventory levels of Chinese ingredients, supplies, and equipment. Forecast usage and reorder supplies as needed to minimize waste and ensure uninterrupted kitchen operations. Customer Engagement: Interact with customers to understand their preferences, dietary requirements, and feedback. Incorporate customer feedback into menu planning and recipe development to enhance customer satisfaction. Training and Development: Provide training and guidance to kitchen staff on Chinese culinary techniques, recipe execution, and kitchen procedures. Foster a positive and collaborative work environment that promotes skill development and teamwork. Requirements: Proven experience (5-7 years) as a Chef specializing in Chinese cuisine, preferably in a high-volume restaurant or hospitality establishment. Extensive knowledge of Chinese culinary traditions, ingredients, regional cuisines, and cooking methods. Strong leadership and management skills, with the ability to lead and motivate a team of kitchen staff. Excellent culinary skills and creativity in menu development, recipe creation, and presentation. Thorough understanding of food safety and sanitation standards, HACCP principles, and kitchen hygiene practices. Effective communication and interpersonal skills, with the ability to interact professionally with customers and team members. Flexibility to work evenings, weekends, and holidays as required by the demands of the job. Certification or formal training in culinary arts, Chinese cuisine, or hospitality management is a plus.
