We are currently seeking a highly skilled and experienced South Indian Chef to lead our culinary team in Kozhikode. As a South Indian Chef, you will be responsible for overseeing the preparation of authentic South Indian dishes, managing kitchen operations, and ensuring high standards of food quality and consistency. Responsibilities: Menu Development: Develop innovative and diverse South Indian menus that showcase traditional and contemporary dishes, taking into account seasonal ingredients, dietary preferences, and customer feedback. Food Preparation: Lead and supervise the preparation and cooking of a wide range of South Indian dishes, including dosas, idlis, vadas, sambar, rasam, chutneys, and traditional curries. Ensure adherence to recipe specifications and quality standards. Ingredient Selection: Source and select high-quality ingredients for use in South Indian cooking, including fresh produce, spices, lentils, grains, and herbs. Establish relationships with local vendors and suppliers to ensure consistent quality and availability of ingredients. Culinary Techniques: Demonstrate expertise in traditional South Indian cooking techniques, such as tempering (tadka), grinding, roasting, pressure cooking, and fermentation. Train and mentor kitchen staff in proper cooking methods and techniques. Quality Control: Conduct regular quality checks on prepared dishes to ensure flavor, texture, and presentation meet established standards. Address any quality issues promptly and implement corrective actions as needed. Kitchen Management: Oversee all aspects of kitchen operations, including food preparation, cooking, plating, and presentation. Manage kitchen staff schedules, tasks, and performance to ensure efficient workflow and timely service. Food Safety and Hygiene: Enforce strict adherence to food safety and sanitation regulations, including proper handwashing, food storage, temperature control, and cleaning procedures. Maintain a clean and organized kitchen environment at all times. Inventory Management: Monitor inventory levels of South Indian ingredients, supplies, and kitchen equipment. Forecast usage and reorder supplies as needed to minimize waste and maximize efficiency. Customer Satisfaction: Interact with customers to understand their preferences, dietary requirements, and feedback. Respond to customer inquiries, comments, and complaints with professionalism and courtesy. Training and Development: Provide training and guidance to kitchen staff on South Indian culinary techniques, recipe execution, and kitchen procedures. Foster a positive and collaborative work environment that promotes skill development and growth. Requirements: Proven experience (5-7 years) as a Chef specializing in South Indian cuisine, preferably in a high-volume restaurant or hospitality establishment. Extensive knowledge of South Indian culinary traditions, ingredients, spices, and cooking methods. Strong leadership and management skills, with the ability to lead and motivate a team of kitchen staff. Excellent culinary skills and creativity in menu development, recipe creation, and presentation. Thorough understanding of food safety and sanitation standards, HACCP principles, and kitchen hygiene practices. Effective communication and interpersonal skills, with the ability to interact professionally with customers and team members. Flexibility to work evenings, weekends, and holidays as required by the demands of the job. Certification or formal training in culinary arts, South Indian cuisine, or hospitality management is a plus.
