We are currently seeking a talented and experienced South Indian Chef to lead our culinary team in Kumily. As a South Indian Chef, you will be responsible for overseeing all aspects of our South Indian cuisine offerings, including menu planning, recipe development, food preparation, and kitchen management. Your expertise in South Indian culinary traditions and your creative flair will contribute to delivering exceptional dining experiences for our guests. Responsibilities: Menu Development: Develop innovative and authentic South Indian menus that showcase the diverse flavors and specialties of the region. Create balanced menus featuring a variety of vegetarian and non-vegetarian dishes, appetizers, mains, and desserts. Recipe Creation: Design and develop original recipes for South Indian dishes, incorporating traditional ingredients, spices, and cooking techniques. Experiment with flavors, textures, and presentations to create unique and memorable culinary experiences. Food Preparation: Supervise and participate in the preparation and cooking of South Indian dishes, ensuring that quality and consistency are maintained at all times. Train kitchen staff on proper cooking techniques, portioning, and plating standards. Quality Control: Implement strict quality control measures to ensure that all dishes meet our standards of taste, presentation, and freshness. Conduct regular taste tests and inspections to monitor food quality and address any issues promptly. Kitchen Management: Manage day-to-day operations of the kitchen, including scheduling, staffing, and inventory management. Coordinate with suppliers to source fresh and high-quality ingredients and maintain adequate stock levels. Hygiene and Safety: Enforce strict hygiene and sanitation practices in the kitchen, following food safety regulations and standards. Cost Control: Monitor food costs, portion sizes, and wastage to maximize profitability while maintaining quality. Implement cost-saving measures and efficient kitchen practices to optimize resource utilization. Staff Training and Development: Provide training and guidance to kitchen staff on South Indian cooking techniques, recipe execution, and kitchen procedures. Foster a culture of learning and continuous improvement within the culinary team. Customer Interaction: Interact with guests to understand their preferences, dietary restrictions, and feedback on the dining experience. Incorporate guest feedback into menu adjustments and improvements. Innovation and Creativity: Stay updated on culinary trends, techniques, and ingredients related to South Indian cuisine. Continuously innovate and experiment with new dishes, presentations, and flavors to keep the menu fresh and exciting. Requirements: Proven experience (5+ years) as a Chef specializing in South Indian cuisine, preferably in a fine dining restaurant or hotel setting. In-depth knowledge of South Indian culinary traditions, ingredients, spices, and cooking methods. Creative flair and passion for innovation in recipe development and menu planning. Strong leadership and management skills, with the ability to inspire and motivate kitchen staff. Excellent communication and interpersonal skills, with the ability to collaborate effectively with team members and interact with guests. Formal culinary training or certification from a recognized culinary institute is preferred. Ability to work under pressure in a fast-paced environment and maintain composure during busy service periods. Flexibility to work evenings, weekends, and holidays as required in a hospitality setting.
