We are currently seeking a skilled and experienced Porotta Maker to join our culinary team in Kumily. As a Porotta Maker, you will be responsible for preparing and cooking delicious and authentic porottas, a popular South Indian flatbread, according to traditional recipes and techniques. Your role will contribute to providing high-quality dining experiences for our customers and maintaining the reputation of our establishment. Responsibilities: Dough Preparation: Prepare porotta dough by mixing flour, water, salt, and other ingredients according to established recipes and proportions. Knead the dough thoroughly to achieve the desired texture and consistency. Rolling and Stretching: Roll out portions of dough into thin sheets using a rolling pin or dough sheeter. Stretch and shape the dough into round or oval shapes, ensuring even thickness and uniformity. Layering and Folding: Apply oil or ghee to the stretched dough and fold it into layers to create flaky and soft porottas. Repeat the layering and folding process to build multiple layers and enhance the texture of the porottas. Cooking: Cook the prepared porottas on a hot griddle or tawa, flipping them regularly to ensure even cooking and browning. Apply oil or ghee as needed to achieve a golden-brown crust and soft, flaky layers. Quality Control: Monitor the cooking process closely to maintain quality standards and prevent overcooking or burning. Adjust heat levels and cooking times as necessary to achieve the desired texture and flavor. Presentation: Present the cooked porottas attractively on serving plates or baskets, garnished with fresh herbs or spices if desired. Ensure that porottas are served hot and fresh to customers. Cleanliness and Hygiene: Maintain a clean and sanitary work area at all times, following food safety and hygiene regulations. Clean and sanitize cooking utensils, equipment, and surfaces regularly to prevent contamination. Inventory Management: Monitor inventory levels of ingredients such as flour, oil, and spices, and communicate with the kitchen supervisor or manager to replenish supplies as needed. Minimize waste and ensure efficient use of resources. Collaboration: Coordinate with other kitchen staff, including chefs, cooks, and helpers, to ensure smooth workflow and timely preparation of food orders. Communicate effectively to fulfill customer requests and accommodate special dietary preferences or restrictions. Continuous Improvement: Stay updated on new techniques, recipes, and trends in porotta making and South Indian cuisine. Experiment with flavors, fillings, and variations to enhance the menu and delight customers with innovative offerings. Requirements: Prior experience (1-2 years) as a Porotta Maker or similar role in a restaurant or hotel kitchen. Proficiency in preparing and cooking porottas using traditional methods and techniques. Knowledge of South Indian cuisine, particularly Kerala cuisine, and familiarity with regional variations of porotta recipes. Strong attention to detail and precision in dough preparation, rolling, layering, and cooking. Ability to work efficiently in a fast-paced kitchen environment and handle multiple tasks simultaneously.
