We are currently seeking a skilled and experienced Tandoor Maker to join our culinary team in Wayanad. The Tandoor Maker plays a crucial role in preparing and cooking a variety of dishes in the tandoor oven, ensuring that guests experience the authentic flavors of Indian and Middle Eastern cuisine. This position requires expertise in operating and maintaining the tandoor oven, as well as a passion for creating delicious and flavorful dishes. Responsibilities: Prepare and marinate meats, seafood, vegetables, and bread for cooking in the tandoor oven, according to established recipes and standards. Skewer marinated items onto metal skewers or place them directly in the tandoor oven for cooking. Monitor the tandoor oven closely, adjusting temperature and cooking time as needed to ensure even cooking and optimal flavor. Prepare and cook a variety of tandoori dishes, including but not limited to tandoori chicken, kebabs, naan bread, and roti. Brush items with marinade or oil during the cooking process to enhance flavor and moisture. Coordinate with kitchen staff to ensure timely preparation and serving of tandoori dishes. Maintain cleanliness and hygiene in the tandoor area, including the oven, skewers, and surrounding workspaces. Assist in maintaining inventory of ingredients and supplies needed for tandoor cooking. Follow all food safety and sanitation regulations and guidelines, including proper handling of raw meat and seafood. Collaborate with kitchen team to develop and innovate new tandoori recipes and menu items. Requirements: Previous experience working as a Tandoor Maker or similar role, preferably in a restaurant or food service establishment specializing in Indian or Middle Eastern cuisine. Expertise in operating and maintaining a tandoor oven, including controlling temperature and adjusting cooking techniques. Strong knowledge of Indian and Middle Eastern spices, flavors, and cooking techniques. Ability to maintain consistency in flavor, texture, and presentation of tandoori dishes. Excellent grilling skills and the ability to monitor and adjust cooking temperatures accurately. Attention to detail and a commitment to maintaining high standards of quality and taste. Physical stamina and the ability to work in a fast-paced environment. Good communication and teamwork skills. Flexibility to work various shifts, including evenings, weekends, and holidays, as needed. Formal culinary education or relevant certifications are a plus.
