Job Description: As a Porotta Maker at [Insert Company Name], you will be responsible for preparing and cooking delicious and perfectly layered porottas, a staple bread in Kerala cuisine. You will use your expertise in dough preparation, rolling, and cooking techniques to create porottas that are soft, flaky, and flavorful, meeting our customers' expectations for quality and taste. The ideal candidate will have previous experience as a porotta maker or similar role, along with a passion for culinary excellence. Key Responsibilities: Prepare dough for porottas by mixing flour, water, and other ingredients according to the recipe and proportions. Knead and stretch the dough to achieve the desired consistency and texture, ensuring that it is smooth, elastic, and free of lumps. Divide the dough into portions and shape them into balls, allowing them to rest and ferment for optimal flavor and texture. Roll out the dough balls into thin, round discs using a rolling pin, stretching and rotating them to achieve even thickness and size. Layer the rolled dough discs with ghee or oil, folding and pleating them to create multiple layers and a distinctive flaky texture. Cook the layered dough discs on a hot griddle or tawa, flipping them frequently and brushing with ghee or oil to ensure even cooking and browning. Monitor the cooking process closely, adjusting heat and cooking time as needed to prevent burning and achieve the desired level of crispiness and color. Stack the cooked porottas neatly and keep them warm until they are served to customers, maintaining their freshness and quality. Clean and maintain equipment, utensils, and work areas, following sanitation and hygiene standards to ensure food safety and cleanliness. Collaborate with other kitchen staff and chefs to coordinate food preparation and service, contributing to the overall efficiency and success of the kitchen. Qualifications: Previous experience as a porotta maker, chapati maker, or similar role in a restaurant or culinary establishment. Strong knowledge of Kerala cuisine, particularly porotta-making techniques, recipes, and ingredients. Skill and proficiency in dough preparation, rolling, layering, and cooking, with the ability to create perfectly layered and flaky porottas consistently. Attention to detail and commitment to quality, with a focus on achieving excellence in taste, texture, and presentation. Physical stamina and dexterity to knead dough, roll out porottas, and stand for extended periods in a fast-paced kitchen environment. Ability to work efficiently and collaboratively as part of a team, following instructions and contributing to a positive work culture. Flexibility to work evenings, weekends, and holidays as needed, based on restaurant hours and scheduling requirements.
