We are currently seeking a talented and experienced Chinese Chef to join our culinary team in Ernakulam. The Chinese Chef will be responsible for preparing and cooking a variety of Chinese dishes, ensuring authenticity, quality, and consistency. This role requires expertise in Chinese cuisine, creativity in recipe development, and strong leadership skills in managing kitchen operations. Responsibilities: Menu Planning and Development: Collaborate with management to develop and update the Chinese menu, incorporating authentic and innovative dishes to meet customer preferences and market trends. Create new recipes and adapt traditional Chinese dishes, ensuring flavor balance, visual appeal, and adherence to culinary standards. Food Preparation and Cooking: Prepare and cook a wide range of Chinese dishes, including appetizers, soups, stir-fries, noodles, rice dishes, and main courses. Ensure that ingredients are fresh, properly portioned, and cooked to perfection, with attention to taste, texture, and presentation. Use traditional Chinese cooking techniques such as stir-frying, steaming, braising, and deep-frying to achieve authentic flavors and textures. Quality Control: Maintain high standards of food quality, consistency, and presentation, conducting regular tastings and inspections to ensure adherence to recipes and standards. Monitor portion sizes, plate presentation, and garnishing to enhance the dining experience and meet customer expectations. Kitchen Management: Lead and supervise kitchen staff, including cooks, assistants, and helpers, providing guidance, training, and feedback to ensure efficient operations and teamwork. Coordinate with other departments to ensure timely preparation and service of Chinese dishes, maintaining communication and collaboration to meet customer needs. Inventory Management: Manage inventory of Chinese ingredients, spices, and condiments, ensuring adequate stock levels and proper storage to minimize waste and spoilage. Monitor food costs and portion control, implementing measures to optimize profitability and reduce expenses. Hygiene and Sanitation: Ensure compliance with food safety and sanitation regulations, maintaining cleanliness and hygiene in the kitchen, storage areas, and work surfaces. Train kitchen staff on proper food handling, storage, and hygiene practices, enforcing standards and procedures to prevent contamination and foodborne illness. Requirements: Proven experience as a Chinese Chef or Sous Chef in a reputable restaurant or hotel, with a focus on Chinese cuisine. Culinary degree or diploma from a recognized culinary institute is preferred. Extensive knowledge of Chinese cooking techniques, ingredients, and flavors, with the ability to create authentic and innovative dishes. Strong leadership and managerial skills, with the ability to motivate and inspire a team to achieve culinary excellence. Excellent communication and interpersonal skills, with the ability to work effectively with staff, management, and customers. Attention to detail and creativity in recipe development, with a passion for delivering memorable dining experiences.
