We are currently seeking an experienced and talented South Indian Chef to lead our culinary team in Ernakulam. The South Indian Chef will be responsible for overseeing the preparation and presentation of authentic South Indian cuisine in our establishment. This role requires strong leadership skills, culinary expertise, and a passion for delivering exceptional dining experiences. Responsibilities: Develop and create innovative South Indian menus, incorporating traditional recipes, seasonal ingredients, and modern culinary techniques. Lead and supervise kitchen staff, including cooks, assistants, and helpers, providing guidance, training, and mentorship to ensure high-quality food production and service. Plan and organize daily kitchen operations, including food preparation, cooking, plating, and presentation, to meet customer demand and quality standards. Coordinate with purchasing and procurement teams to source high-quality ingredients, spices, and specialty products for South Indian cuisine. Monitor food inventory levels, manage stock rotation, and minimize waste to control food costs and maximize profitability. Ensure adherence to food safety regulations and sanitation guidelines, maintaining cleanliness and hygiene in the kitchen and food preparation areas. Taste and evaluate dishes for flavor, texture, and presentation, making adjustments as needed to maintain consistency and quality. Collaborate with restaurant management to develop and implement special promotions, events, and themed menus to attract customers and increase sales. Stay updated on current culinary trends, South Indian food culture, and new cooking techniques, and incorporate them into menu development and kitchen practices. Foster a positive and collaborative work environment, promoting teamwork, communication, and mutual respect among kitchen staff. Requirements: Proven experience as a South Indian Chef or Head Chef in a reputable restaurant, hotel, or culinary establishment. In-depth knowledge of South Indian cuisine, regional specialties, ingredients, spices, and cooking techniques. Strong leadership and managerial skills, with the ability to motivate and inspire kitchen staff to excel in their roles. Excellent culinary skills and creativity in menu planning, recipe development, and food presentation. Ability to work efficiently in a fast-paced kitchen environment, multitasking and prioritizing tasks to meet deadlines and customer expectations. Proficiency in food cost control, budget management, and inventory management to achieve financial goals and targets. Knowledge of food safety and sanitation regulations, including HACCP principles and best practices. Certification in culinary arts or hospitality management is preferred but not mandatory. Excellent communication and interpersonal skills, with the ability to collaborate effectively with kitchen staff, management, and other team members.
