We are currently seeking a skilled and experienced Tandoor Chef to join our culinary team in Trivandrum. The Tandoor Chef will be responsible for preparing and cooking a variety of tandoori dishes, including bread, meats, and vegetables, according to traditional recipes and quality standards. This role requires expertise in tandoor cooking techniques, creativity, and a passion for delivering delicious and authentic Indian cuisine. Responsibilities: Prepare and marinate meats, seafood, and vegetables for tandoor cooking, using traditional Indian spices and seasonings. Operate and maintain tandoor oven equipment, including adjusting temperature settings and monitoring cooking times to ensure optimal results. Skewer and grill meats, poultry, and seafood in the tandoor oven, using appropriate cooking techniques and methods to achieve desired levels of doneness and flavor. Bake a variety of bread in the tandoor oven, including naan, roti, and kulcha, to accompany main dishes and appetizers. Monitor food quality and presentation throughout the cooking process, ensuring that dishes are cooked to perfection and meet established standards. Coordinate with other kitchen staff to ensure timely preparation and delivery of tandoori dishes as part of a complete meal service. Assist with menu planning, recipe development, and food costing for tandoori dishes, in collaboration with the head chef or kitchen manager. Adhere to all food safety and sanitation regulations, including proper handling, storage, and disposal of food items and equipment. Train and mentor junior kitchen staff in tandoor cooking techniques, recipes, and safety procedures. Maintain a clean and organized work environment, including the tandoor station and surrounding areas, to ensure compliance with hygiene and cleanliness standards. Requirements: Proven experience as a Tandoor Chef or Tandoori Cook in a restaurant or hospitality setting. In-depth knowledge of Indian cuisine, particularly tandoori cooking techniques, spices, and ingredients. Strong culinary skills and creativity in developing flavorful and visually appealing tandoori dishes. Ability to operate and maintain tandoor oven equipment effectively, including troubleshooting and performing routine maintenance tasks. Attention to detail and a focus on quality and consistency in food preparation and presentation. Physical stamina and the ability to work in a fast-paced kitchen environment, standing for extended periods and lifting heavy objects as needed. Excellent teamwork and communication skills, with the ability to collaborate effectively with kitchen staff and management. Flexibility to work varying shifts, including evenings, weekends, and holidays, as required by business needs. Formal culinary training or certification from a recognized culinary institute is preferred but not required.
