Key Responsibilities: Menu Planning and Development: Create and plan menus featuring a variety of traditional and contemporary South Indian dishes, including vegetarian and non-vegetarian options. Research and experiment with new recipes, ingredients, and flavor combinations to keep the menu fresh and appealing to guests. Food Preparation and Cooking: Prepare and cook South Indian dishes according to authentic recipes and culinary standards, ensuring consistency in taste, texture, and presentation. Utilize traditional cooking techniques, spices, and ingredients to enhance the flavor and aroma of dishes, while also incorporating modern cooking methods where appropriate. Ingredient Selection and Procurement: Source high-quality ingredients, spices, and produce for South Indian cuisine, ensuring freshness, authenticity, and adherence to food safety standards. Maintain inventory levels, monitor stock rotation, and manage kitchen supplies to minimize wastage and optimize cost efficiency. Kitchen Operations and Management: Oversee all aspects of kitchen operations, including food preparation, cooking, plating, and presentation, to ensure smooth and efficient service delivery. Train, mentor, and supervise kitchen staff, providing guidance on cooking techniques, portion control, and food safety practices. Maintain cleanliness, hygiene, and sanitation standards in the kitchen, following food safety regulations and guidelines. Quality Control and Food Safety: Conduct regular quality checks on prepared dishes to ensure they meet taste, texture, and appearance standards. Monitor food storage, handling, and cooking processes to prevent contamination and ensure compliance with hygiene and safety protocols. Implement corrective actions and improvements as needed to maintain high standards of food quality and safety. Guest Interaction and Feedback: Interact with guests to understand their preferences, dietary restrictions, and feedback on South Indian dishes. Address guest inquiries, special requests, and dietary concerns courteously and professionally, providing personalized dining experiences. Qualifications: Diploma or certification in Culinary Arts, Hotel Management, or related field. Proven experience (X years) as a South Indian Chef in a reputable restaurant, hotel, or resort. In-depth knowledge of South Indian cuisine, including regional variations, ingredients, spices, and cooking techniques. Creative flair and passion for culinary innovation, with the ability to create new and exciting dishes while respecting traditional flavors and recipes. Strong leadership and management skills, with the ability to lead and motivate a team in a high-pressure kitchen environment. Excellent communication and interpersonal skills, with the ability to collaborate effectively with kitchen staff, management, and other departments. Attention to detail and commitment to maintaining high standards of food quality, presentation, and service.
