Responsibilities: Prepare and cook a diverse range of Chinese dishes, including appetizers, soups, stir-fries, noodles, rice dishes, and seafood specialties, according to established recipes and cooking techniques. Coordinate with the head chef and sous chef to plan menu offerings, develop new recipes, and incorporate seasonal ingredients and regional flavors into menu selections. Properly measure and portion ingredients, including meats, vegetables, sauces, and seasonings, to ensure consistent flavor profiles and portion sizes across all dishes. Handle and prepare raw ingredients safely and hygienically, including washing, chopping, slicing, and marinating, following food safety guidelines and sanitation standards. Operate cooking equipment and utensils efficiently, including woks, steamers, grills, and deep fryers, to achieve desired cooking temperatures and textures for each dish. Monitor cooking processes and adjust heat levels, cooking times, and ingredient quantities as needed to achieve optimal results and maintain food quality standards. Plate and garnish dishes attractively, incorporating artistic presentation techniques and garnishes to enhance visual appeal and create memorable dining experiences. Maintain cleanliness and organization in the kitchen, including workstations, cooking equipment, utensils, and storage areas, in compliance with health and safety regulations. Assist with inventory management, including stock rotation, storage, and ordering of ingredients and supplies, to ensure sufficient inventory levels for daily operations. Collaborate with kitchen staff to coordinate food preparation and service activities, communicate order statuses, and prioritize tasks to meet customer demand and service deadlines. Follow recipes, portion control guidelines, and plating instructions accurately to minimize food waste and maximize profitability for the restaurant. Assist with menu planning, recipe development, and special promotions, contributing ideas and suggestions to enhance the dining experience for customers. Adhere to company policies, procedures, and kitchen standards, including hygiene practices, dress code, and safety protocols, to maintain a professional work environment. Assist with training and mentoring junior kitchen staff, providing guidance, support, and feedback to develop their culinary skills and knowledge. Collaborate with front-of-house staff, including servers and managers, to ensure smooth communication and coordination between the kitchen and dining areas. Requirements: Proven experience as a Chinese Cook or Line Cook in a reputable restaurant or hotel, specializing in Chinese cuisine. In-depth knowledge of Chinese cooking techniques, ingredients, and regional culinary traditions, with a passion for delivering authentic and flavorful dishes. Culinary degree or certification from a recognized culinary school or institution preferred but not required. Strong cooking skills and proficiency in using kitchen equipment and utensils, including woks, cleavers, and bamboo steamers. Knowledge of food safety regulations, sanitation practices, and kitchen hygiene standards, with a commitment to upholding cleanliness and food quality standards. Ability to work efficiently in a fast-paced kitchen environment, managing multiple tasks and priorities while maintaining composure and attention to detail. Excellent communication and teamwork skills, with the ability to collaborate effectively with kitchen staff, servers, and management. Adaptability and flexibility to accommodate changing menu requirements, customer preferences, and business demands. Physical stamina and dexterity to stand for extended periods, lift heavy objects, and perform repetitive tasks in a busy kitchen environment. Fluent in Malayalam; proficiency in English or other languages is a plus. Availability to work evenings, weekends, and holidays as needed to support restaurant operations and special events.
