Responsibilities: Plan, prepare, and cook a wide range of Chinese dishes, including appetizers, soups, stir-fries, noodles, rice dishes, and seafood specialties. Ensure authenticity and integrity of Chinese recipes, flavors, and cooking techniques, incorporating traditional ingredients and seasonings. Work closely with the kitchen team to develop menus, specials, and promotions featuring Chinese cuisine, and collaborate on menu planning and recipe development. Source high-quality ingredients, spices, and sauces for Chinese cooking, ensuring freshness, flavor, and authenticity in every dish. Execute cooking techniques such as stir-frying, steaming, deep-frying, and braising to achieve optimal flavors, textures, and presentations. Prepare and marinate meats, poultry, seafood, and tofu for use in Chinese dishes, ensuring proper seasoning and flavor infusion. Coordinate with kitchen staff to ensure timely preparation and delivery of Chinese food orders, maintaining food quality and temperature. Plate and garnish Chinese dishes attractively, using traditional serving vessels and garnishes, and ensure proper portion sizes and presentation standards. Monitor food inventory levels, track usage, and assist in inventory management, including stock rotation, ordering, and storage of Chinese ingredients. Maintain cleanliness and organization in the Chinese kitchen, including workstations, equipment, utensils, and storage areas, following sanitation standards and safety protocols. Adhere to food safety regulations, hygiene practices, and sanitation guidelines in food handling, storage, and preparation. Train and mentor kitchen staff on Chinese cooking techniques, recipes, and presentation standards, ensuring consistency and quality in food preparation. Assist in the development and implementation of kitchen policies, procedures, and standards of operation, including food quality control and portion management. Collaborate with restaurant management on budgeting, cost control, and profitability goals for the Chinese kitchen department. Provide leadership, motivation, and support to kitchen staff, fostering teamwork, communication, and a positive work environment. Requirements: Diploma or degree in Culinary Arts, Hotel Management, or a related field. Proven experience (X years) as a Chef specializing in Chinese cuisine, with a track record of culinary excellence and leadership in a restaurant setting. In-depth knowledge of Chinese culinary traditions, ingredients, spices, cooking techniques, and regional variations. Strong culinary skills, including knife skills, food preparation techniques, and cooking methods specific to Chinese cuisine. Creativity and innovation in menu development, recipe creation, and presentation of Chinese dishes. Excellent leadership and management skills, with the ability to motivate, train, and supervise kitchen staff effectively. Commitment to quality, consistency, and food safety, with attention to detail and adherence to sanitation standards. Ability to work under pressure in a fast-paced environment, prioritize tasks, and manage multiple responsibilities simultaneously. Excellent communication and interpersonal skills, with the ability to collaborate with colleagues, interact with guests, and provide exceptional service. Flexibility to work shifts, including evenings, weekends, and holidays, as required. Fluency in Malayalam; proficiency in English or other languages is an advantage.
