As a Porotta Maker, you will play a crucial role in preparing and cooking porottas, a popular South Indian flatbread, to perfection. If you have experience in making porottas or similar Indian breads and possess excellent culinary skills, we invite you to apply for this position. Responsibilities: Dough Preparation: Prepare porotta dough by mixing flour, water, salt, and other ingredients according to the established recipe. Knead the dough to the right consistency, ensuring it is smooth and elastic. Rolling and Flattening: Roll out portions of dough into thin circles using a rolling pin. Flatten the dough evenly to achieve uniform thickness and texture, ensuring the proper elasticity and stretchiness required for porotta. Layering and Folding: Apply oil or ghee on the flattened dough and fold it into pleats. Stretch and fold the pleated dough into a spiral shape, creating multiple layers. This process helps to achieve the characteristic flakiness of porotta. Cooking: Cook the layered porotta on a hot griddle or tawa, flipping it frequently to ensure even cooking and browning. Apply oil or ghee as needed to enhance flavor and texture. Fluffing: Fluff the cooked porotta by gently tapping it with your hands or using a cloth, separating the layers and creating a soft, fluffy texture. Quality Control: Monitor the cooking process and adjust cooking times and temperatures as needed to ensure that porottas are cooked to perfection. Inspect the appearance, texture, and taste of porottas to maintain quality standards. Quantity Management: Estimate the quantity of porottas needed based on customer orders and kitchen requirements. Prepare dough and cook porottas accordingly to meet demand while minimizing waste. Hygiene and Sanitation: Maintain cleanliness and hygiene in the kitchen area, including proper storage of ingredients, utensils, and equipment. Adhere to food safety standards and sanitation protocols at all times. Teamwork: Collaborate with other kitchen staff, including chefs, cooks, and helpers, to coordinate food preparation and ensure timely service. Communicate effectively with colleagues to fulfill customer orders and meet kitchen objectives. Requirements: Culinary Skills: Strong culinary skills and experience in making porottas or similar Indian flatbreads. Ability to handle dough, roll out dough balls, and cook porottas on a griddle or tawa. Attention to Detail: Attention to detail in dough preparation, rolling, folding, and cooking techniques to achieve the desired texture and flakiness of porottas. Physical Stamina: Ability to stand for extended periods, perform repetitive tasks, and work in a fast-paced kitchen environment. Comfortable working with heat and hot surfaces. Hygiene and Safety: Knowledge of food safety and hygiene practices. Adherence to sanitation protocols and cleanliness standards in the kitchen.
