We are currently seeking a skilled and passionate Alfahm Maker to join our team in Kozhikode. The Alfahm Maker will be responsible for preparing delicious and authentic Alfahm dishes, marinating meats, and grilling to perfection. This role requires expertise in Middle Eastern cuisine, attention to detail, and a commitment to delivering exceptional dining experiences. Responsibilities: Prepare Alfahm dishes according to traditional recipes and culinary standards, ensuring authenticity and flavor consistency. Marinate meats, typically chicken or lamb, with a blend of spices, herbs, yogurt, and other seasonings to enhance flavor and tenderness. Skewer marinated meats onto metal or bamboo skewers, arranging them in the grill or oven for cooking, and monitoring cooking times and temperatures to ensure even cooking and optimal results. Grill meats over charcoal or wood-fired grills, rotating skewers and basting with marinade or oil as needed to prevent drying and enhance flavor. Prepare accompanying sauces, dips, and condiments to complement Alfahm dishes, such as garlic sauce, tahini, hummus, and pickled vegetables. Garnish Alfahm dishes with fresh herbs, lemon wedges, and other decorative elements to enhance presentation and appeal. Coordinate with kitchen staff and servers to prioritize Alfahm orders, manage food inventory, and ensure timely preparation and service of Alfahm dishes. Monitor inventory levels of meat, spices, marinades, and other ingredients, and inform supervisors when stock needs to be replenished or reordered. Maintain cleanliness and organization in the Alfahm preparation area, including work surfaces, utensils, grills, and storage areas, following sanitation and hygiene standards. Requirements: Proven experience as an Alfahm Maker, Grill Cook, or similar role in a restaurant, café, or catering establishment specializing in Middle Eastern cuisine. In-depth knowledge of Alfahm preparation techniques, including marination, skewering, grilling, and garnishing, with a minimum of 2-3 years of experience. Familiarity with Middle Eastern spices, herbs, and flavor profiles, and the ability to create authentic and flavorful Alfahm dishes. Proficiency in operating charcoal or wood-fired grills, understanding temperature control, grilling techniques, and food safety practices. Strong culinary skills and a passion for cooking, with the ability to create delicious, visually appealing dishes that meet or exceed customer expectations. Excellent communication and teamwork skills, with the ability to collaborate effectively with kitchen staff, servers, and management. Flexibility to work shifts, including evenings, weekends, and holidays, as required by the restaurant's operational hours.
