We are currently seeking a skilled and experienced Tandoor Maker to join our culinary team in Kozhikode. The Tandoor Maker will be responsible for operating and maintaining the tandoor oven, preparing a variety of traditional Indian bread and meat dishes, and ensuring the quality and authenticity of tandoori cuisine. This role requires expertise in tandoor cooking techniques, attention to detail, and a passion for delivering delicious and flavorful dishes. Responsibilities: Operate and maintain the tandoor oven, ensuring that it is clean, properly heated, and in good working condition for cooking. Prepare a variety of tandoori dishes, including naan bread, roti, kebabs, tikkas, and other meat and vegetable specialties, following authentic recipes and culinary standards. Marinate meats, poultry, and seafood with spices, herbs, and yogurt-based marinades to enhance flavor and tenderness before cooking in the tandoor oven. Skewer marinated ingredients onto metal or bamboo skewers, arranging them in the tandoor oven for cooking, and monitoring cooking times and temperatures to ensure even cooking and optimal results. Monitor the condition of tandoori dishes during cooking, rotating skewers or adjusting oven temperatures as needed to prevent burning or overcooking.
