As a Porotta Maker, you will be responsible for preparing and cooking porottas, a popular South Indian flatbread, in a professional kitchen setting. Your role involves mastering the technique of making soft and flaky porottas, ensuring consistency in size, texture, and taste. This position requires proficiency in porotta making techniques, attention to detail, and the ability to work efficiently in a fast-paced environment. Responsibilities: Porotta Preparation: Prepare dough for porottas by mixing flour, water, salt, and other ingredients according to the recipe. Knead the dough to achieve the desired consistency and texture, ensuring it is smooth and elastic. Rolling and Folding: Roll out portions of the dough into thin circles using a rolling pin, ensuring even thickness and shape. Fold the rolled dough into layers to create the characteristic flakiness and texture of porottas. Cooking and Frying: Heat a griddle or tawa to the appropriate temperature for cooking porottas. Place the folded dough on the hot surface and cook each side until it puffs up and develops golden brown spots. Brush each porotta with ghee or oil while cooking to enhance flavor and texture. Quality Control: Monitor the cooking process to ensure that porottas are cooked evenly and thoroughly. Check for proper puffing and browning, adjusting heat and cooking time as needed to achieve the desired results. Quantity Management: Estimate the quantity of porottas needed based on customer orders and kitchen requirements. Prepare and cook porottas in batches to meet demand while minimizing waste.
