As a Tandoor Maker, you will be responsible for operating and maintaining the tandoor oven in a restaurant or culinary establishment specializing in Indian cuisine. Your role involves preparing and cooking a variety of tandoori dishes, including bread, meats, and vegetables, using traditional techniques and recipes. The ideal candidate will have experience working with tandoor ovens, a strong understanding of Indian culinary traditions, and a passion for creating flavorful and aromatic dishes. Key Responsibilities: Tandoor Operation: Preheat the tandoor oven to the appropriate temperature, ensuring that it reaches the optimal heat level for cooking. Monitor the temperature and adjust the heat as needed during cooking to ensure consistent results. Bread Making: Prepare and shape dough for various types of Indian bread, such as naan, roti, and kulcha. Stretch, flatten, and shape the dough before placing it inside the tandoor oven to cook. Grilling and Roasting: Marinate meats, poultry, seafood, and vegetables in flavorful spice blends and marinades. Skewer the marinated items and place them inside the tandoor oven to grill and roast, imparting a smoky flavor and tender texture. Tandoori Dish Preparation: Prepare a variety of tandoori dishes, including tandoori chicken, kebabs, tikka, and paneer, following traditional recipes and techniques. Ensure that all dishes are cooked to perfection, with the right balance of flavors, textures, and aromas. Food Safety and Hygiene: Adhere to strict food safety and hygiene standards, including proper handling, storage, and cooking temperatures for all ingredients. Maintain cleanliness and sanitation in the tandoor area, including regular cleaning and maintenance of the oven and surrounding workspace. Quality Control: Inspect cooked dishes for quality, appearance, and taste, making adjustments as needed to meet customer expectations. Coordinate with kitchen staff to ensure that tandoori dishes are served promptly and hot to guests. Qualifications and Skills: Proven experience as a Tandoor Maker or Tandoori Chef in a restaurant or culinary establishment specializing in Indian cuisine. In-depth knowledge of tandoor oven operation, maintenance, and cooking techniques, including bread making and grilling. Familiarity with Indian spices, herbs, and marinades used in tandoori dishes, with the ability to create authentic flavors and aromas. Attention to detail and the ability to work efficiently in a fast-paced kitchen environment. Good communication skills and the ability to work effectively as part of a team.
