As a Porotta Maker, you will be responsible for preparing and cooking authentic Kerala porottas in a restaurant, hotel, or food establishment. Your role involves mastering the techniques of porotta making, ensuring consistency in texture, thickness, and flavor, and meeting customer demand for this popular South Indian flatbread. The ideal candidate will have experience in making porottas, a passion for culinary arts, and the ability to work efficiently in a fast-paced kitchen environment. Key Responsibilities: Dough Preparation: Prepare porotta dough by mixing flour, water, salt, and other ingredients according to the established recipe and proportions. Knead the dough thoroughly to achieve the desired texture, elasticity, and consistency for making soft and flaky porottas. Rolling and Stretching: Divide the dough into portions and shape them into small balls for rolling. Roll out each dough ball into thin, round discs using a rolling pin, ensuring uniform thickness and evenness. Layering and Folding: Apply oil or ghee on the rolled dough discs and layer them to create multiple folds or pleats. Fold and stretch the layered dough to form a long strip, incorporating air pockets for fluffiness and texture. Cooking Porottas: Heat a tawa or griddle over medium-high heat and place the prepared porotta strip on it. Cook the porotta on both sides, flipping frequently, until golden brown spots appear and the layers separate, indicating that it is cooked thoroughly. Quality Control and Presentation: Monitor the cooking process closely, adjusting heat levels and cooking times as needed to achieve the desired texture and color. Ensure that all porottas are cooked to perfection, with a soft, flaky interior and a crisp, golden exterior. Hygiene and Cleanliness: Maintain cleanliness and hygiene in the kitchen, including workstations, equipment, and utensils, to ensure food safety and sanitation.
