As a South Indian Chef, you will be responsible for overseeing the preparation and cooking of South Indian cuisine in our establishment located in Ernakulam. You will ensure the authenticity, quality, and consistency of dishes while adhering to food safety and hygiene standards. The ideal candidate will have a passion for South Indian cuisine, excellent culinary skills, and the ability to lead a kitchen team effectively. Key Responsibilities: Menu Planning and Preparation: Plan and develop menus featuring a variety of South Indian dishes, including dosas, idlis, vadas, sambar, rasam, and various rice-based dishes. Prepare and cook South Indian dishes according to traditional recipes and authentic techniques, ensuring flavor, texture, and presentation meet high standards. Kitchen Management: Supervise and coordinate the activities of kitchen staff, including cooks, assistants, and helpers, to ensure smooth operations and timely service. Organize and prioritize tasks in the kitchen, such as ingredient preparation, cooking, and plating, to maintain efficiency and minimize wastage. Food Safety and Hygiene: Ensure compliance with food safety and hygiene regulations, including proper storage, handling, and preparation of ingredients. Maintain cleanliness and sanitation standards in the kitchen area, equipment, and utensils to prevent contamination and ensure a safe working environment. Quality Control: Conduct quality checks on ingredients and finished dishes to ensure they meet established standards for taste, appearance, and portion size. Address any issues or discrepancies in food quality promptly and take corrective action as needed to maintain customer satisfaction. Training and Development: Train kitchen staff on proper cooking techniques, recipe execution, and food presentation to maintain consistency and quality across all dishes. Provide guidance and feedback to kitchen staff to help them improve their culinary skills and performance. Inventory Management: Monitor inventory levels of ingredients and kitchen supplies, and place orders as needed to ensure adequate stock levels and minimize waste. Maintain accurate records of inventory, including receipts, usage, and wastage, to facilitate inventory management and cost control. Qualifications and Skills: Proven experience as a South Indian Chef or in a similar role, with a focus on preparing and cooking South Indian cuisine. In-depth knowledge of South Indian culinary traditions, ingredients, spices, and cooking techniques. Culinary degree or certification from a recognized culinary institute is preferred. Strong leadership and communication skills to effectively lead a kitchen team and coordinate activities. Ability to work efficiently under pressure and meet deadlines in a fast-paced kitchen environment. Attention to detail and creativity to innovate and develop new dishes while maintaining authenticity. Familiarity with food safety and hygiene regulations and best practices. Flexibility to work evenings, weekends, and holidays as required. Additional Information: This position may involve long hours and standing for extended periods in a hot and fast-paced kitchen environment. Fluency in Malayalam and English is preferred. Candidates with prior experience working in South Indian restaurants or hotels will be given preference.
