We are looking for a talented Porotta Maker to prepare and cook traditional Kerala porottas to perfection. The Porotta Maker will play a crucial role in ensuring that our customers enjoy authentic and delicious porottas that meet our restaurant's standards. Responsibilities: Prepare porotta dough according to the traditional recipe, ensuring proper measurements and consistency. Knead and stretch the dough to create thin and uniform layers for porottas. Cook porottas on a hot griddle or tawa, flipping and pressing them to achieve the desired texture. Monitor cooking temperatures and times to ensure that porottas are cooked evenly and to perfection. Coordinate with other kitchen staff to ensure timely preparation and service of porottas. Maintain cleanliness and hygiene in the porotta preparation area, including equipment and utensils. Assist in the preparation of other dishes and ingredients as needed. Follow food safety and sanitation guidelines to ensure the safety and quality of porottas. Collaborate with kitchen supervisors and managers to optimize porotta-making processes and efficiency. Adhere to portion control guidelines and minimize food wastage. Requirements: Proven work experience as a Porotta Maker or in a similar role, preferably in a restaurant or food service establishment. In-depth knowledge of traditional Kerala porotta-making techniques and recipes. Ability to knead, stretch, and cook porotta dough to create thin and flaky layers. Experience using a hot griddle or tawa for cooking porottas. Strong attention to detail and commitment to quality. Ability to work efficiently in a fast-paced kitchen environment. Excellent communication and teamwork skills. Flexibility to work various shifts, including evenings, weekends, and holidays. Knowledge of food safety and hygiene practices.
