We are looking for a talented and experienced Porotta Maker to prepare high-quality, traditional Kerala porottas for our customers. The Porotta Maker will play a crucial role in ensuring that our customers enjoy authentic and delicious porottas that meet our restaurant's standards. Responsibilities: Prepare porotta dough according to the traditional recipe and restaurant standards. Roll and stretch the dough to create thin layers for porottas. Cook porottas on a hot griddle or tawa, ensuring they are cooked evenly and achieve the desired texture. Monitor the temperature and cooking time to ensure porottas are cooked to perfection. Maintain cleanliness and hygiene in the porotta preparation area, including equipment and utensils. Assist in the preparation of other dishes and ingredients as needed. Collaborate with other kitchen staff to ensure smooth workflow and timely service. Follow food safety and sanitation guidelines at all times. Dispose of waste and leftover food properly. Adhere to portion control and minimize food wastage. Report any issues or concerns to the kitchen supervisor or manager. Requirements: Proven work experience as a Porotta Maker or in a similar role, preferably in a restaurant or food service establishment. In-depth knowledge of traditional Kerala porotta making techniques and recipes. Ability to roll and stretch porotta dough to create thin and uniform layers. Experience using a hot griddle or tawa for cooking porottas. Strong attention to detail and commitment to quality. Ability to work efficiently in a fast-paced environment. Good communication and teamwork skills. Willingness to work flexible hours, including evenings, weekends, and holidays. Knowledge of food safety and hygiene practices.
