We are looking for an experienced and talented South Indian Chef to join our team in Ernakulam. The South Indian Chef will be responsible for preparing authentic South Indian dishes, maintaining quality standards, and ensuring customer satisfaction. Responsibilities: Menu Planning: Plan and develop menus featuring a variety of traditional South Indian dishes, including dosas, idlis, vadas, sambar, rasam, curries, and chutneys, while also incorporating seasonal ingredients and regional specialties. Food Preparation: Prepare and cook South Indian dishes according to established recipes, portion sizes, and presentation standards. Ensure that all food is cooked to perfection, using fresh ingredients and traditional cooking methods. Quality Control: Maintain high standards of food quality, taste, and consistency in every dish prepared. Conduct regular inspections of ingredients, kitchen equipment, and food storage areas to ensure compliance with food safety and hygiene regulations. Recipe Development: Experiment with new recipes, flavors, and ingredients to innovate and improve the menu offerings. Adapt recipes to meet dietary restrictions and customer preferences while preserving the authenticity of South Indian cuisine. Kitchen Management: Oversee kitchen operations, including food preparation, cooking, plating, and presentation. Train and supervise kitchen staff to ensure adherence to recipes, portion control, and food safety protocols. Inventory Management: Monitor inventory levels of food ingredients, spices, and supplies. Place orders for replenishment as needed to maintain adequate stock levels and minimize waste. Customer Service: Collaborate with front-of-house staff to ensure a seamless dining experience for guests. Respond to customer feedback and special requests promptly and courteously, striving to exceed expectations and enhance customer satisfaction. Hygiene and Sanitation: Maintain cleanliness and sanitation standards in the kitchen and food preparation areas at all times. Follow proper food handling procedures, sanitation guidelines, and safety protocols to prevent contamination and ensure food safety. Requirements: Proven experience as a South Indian Chef or Cook in a restaurant or hotel setting. Extensive knowledge of South Indian cuisine, ingredients, and cooking techniques. Culinary degree or certification from a recognized culinary school or institution preferred. Strong leadership and communication skills. Ability to work in a fast-paced environment and manage multiple tasks simultaneously. Attention to detail and a passion for culinary excellence.
