As a Chinese Chef in Idukki, your primary responsibility is to oversee the preparation of authentic Chinese dishes to the highest standards of quality, taste, and presentation. Your duties may include, but are not limited to: Menu Development: Collaborating with restaurant management to develop and refine the menu, ensuring it offers a diverse selection of authentic Chinese dishes that appeal to customers. Recipe Creation and Standardization: Creating new recipes and refining existing ones to enhance flavor, presentation, and customer satisfaction. Standardizing recipes to maintain consistency across all dishes. Food Preparation and Cooking: Leading the kitchen team in preparing and cooking a variety of Chinese dishes, including stir-fries, noodles, dumplings, soups, and rice dishes, using traditional Chinese cooking techniques and methods. Ingredient Sourcing and Quality Control: Selecting and sourcing fresh, high-quality ingredients, sauces, spices, and seasonings to ensure authentic flavors and optimal taste in each dish. Monitoring ingredient quality and freshness to maintain high standards. Kitchen Management: Overseeing the organization and management of the kitchen workspace, including ensuring cleanliness, sanitization, and proper storage of utensils, equipment, and ingredients. Managing kitchen staff schedules and workflow to ensure efficient operations. Training and Development: Providing guidance, training, and mentorship to kitchen staff, including cooks and assistants, to ensure they understand and adhere to proper cooking techniques, recipes, and hygiene standards. Quality Assurance: Conducting regular taste tests and visual inspections of dishes to ensure they meet the restaurant's standards of quality, taste, and presentation. Making adjustments as needed to maintain consistency and customer satisfaction. Customer Satisfaction: Interacting with customers to understand their preferences and dietary requirements. Responding promptly and courteously to customer feedback and special requests, striving to exceed guests' expectations with every dish served. Food Safety and Hygiene: Ensuring strict adherence to food safety and hygiene standards at all times, including proper storage, handling, and cooking temperatures, to prevent contamination and ensure food safety. Budget Management: Assisting with menu costing and inventory management to optimize food costs and minimize waste. Monitoring kitchen expenses and identifying opportunities for cost-saving measures. Requirements: Proven experience as a Chef specializing in Chinese cuisine, preferably in a high-volume restaurant or hotel environment. In-depth knowledge of Chinese culinary traditions, ingredients, sauces, spices, and cooking techniques. Creative flair and passion for developing innovative and authentic Chinese dishes. Strong leadership and management skills, with the ability to motivate and inspire kitchen staff. Excellent organizational and time management abilities, with a focus on efficiency and productivity.
