As a South Indian Chef, you will be responsible for overseeing the preparation and cooking of South Indian cuisine in a professional kitchen environment. You will ensure that dishes are prepared to the highest standards of quality, authenticity, and taste, while also supervising kitchen staff and maintaining cleanliness and food safety standards. Duties and Responsibilities: Menu Planning and Development: Create and develop authentic South Indian recipes and menus, taking into account regional variations and customer preferences. Food Preparation: Prepare and cook a variety of South Indian dishes, including dosas, idlis, vadas, sambar, rasam, chutneys, and curries, using traditional cooking methods and techniques. Ingredient Selection: Source and select fresh, high-quality ingredients for use in South Indian dishes, ensuring authenticity and flavor. Kitchen Supervision: Supervise kitchen staff, including cooks, prep cooks, and assistants, ensuring that they adhere to recipes, portion sizes, and quality standards. Quality Control: Monitor the quality and consistency of dishes throughout the cooking process, making adjustments as necessary to ensure that they meet the restaurant's standards. Inventory Management: Manage inventory levels of South Indian ingredients and supplies, including spices, lentils, rice, and vegetables, and coordinate with the purchasing department to replenish stock as needed. Food Safety and Hygiene: Ensure compliance with food safety and hygiene regulations and standards, including proper storage, handling, and labeling of food items, as well as cleanliness and sanitation of kitchen equipment and workspaces. Training and Development: Train kitchen staff in the preparation and cooking of South Indian dishes, as well as proper cooking techniques and food safety practices. Menu Costing: Assist in menu costing and pricing of South Indian dishes, taking into account ingredient costs, portion sizes, and profit margins. Qualifications: Proven experience as a South Indian Chef or Cook in a professional kitchen environment, with expertise in preparing a variety of South Indian dishes. Extensive knowledge of South Indian cuisine, ingredients, spices, and cooking techniques. Strong culinary skills and creativity in developing new recipes and menu items. Ability to work efficiently in a fast-paced environment and manage multiple tasks simultaneously.
