We are currently seeking a skilled and experienced Tandoor Maker to join our culinary team at our restaurant in Palakkad. As a Tandoor Maker, you will be responsible for preparing and cooking a variety of dishes using the traditional tandoor oven, ensuring they meet our high standards of taste, quality, and presentation. This role requires expertise in Indian and Middle Eastern cuisine and a passion for creating flavorful dishes that delight our customers. Responsibilities: Operate and maintain the tandoor oven, ensuring it is properly heated and maintained for cooking. Prepare and marinate meats, seafood, and vegetables for tandoor cooking, ensuring proper seasoning and flavor infusion. Cook a variety of tandoori dishes, including but not limited to, tandoori chicken, kebabs, naan bread, and tandoori roti. Monitor cooking times and temperatures to ensure meats are cooked to perfection, with a juicy and tender texture. Prepare and assemble accompaniments and side dishes, such as chutneys, raita, and salads, to complement the tandoori dishes. Coordinate with other kitchen staff to ensure timely preparation and service of tandoor orders, maintaining consistency and quality. Ensure compliance with food safety and hygiene regulations, including proper handling, storage, and preparation of ingredients. Maintain cleanliness and organization of the tandoor station, equipment, and utensils. Train and mentor kitchen staff on tandoor cooking techniques, recipes, and presentation standards. Collaborate with the restaurant management team to develop new tandoori dishes, specials, and promotions. Stay updated on current trends and innovations in Indian and Middle Eastern cuisine, and incorporate new ideas into menu development and presentation. Handle any tandoor-related issues or emergencies that may arise, ensuring efficient resolution and minimal disruption to service. Perform administrative tasks, such as inventory management, scheduling, and cost control, to optimize tandoor station operations. Requirements: Proven experience as a Tandoor Maker or Tandoor Chef, preferably in an Indian or Middle Eastern restaurant or hotel. Strong knowledge of Indian and Middle Eastern culinary traditions, ingredients, and cooking techniques, especially in tandoor cooking. Creativity and passion for creating flavorful and authentic tandoori dishes. Excellent tandoor cooking skills, with the ability to cook meats and breads to perfection. Strong organizational and multitasking abilities, with attention to detail. Flexibility to work evenings, weekends, and holidays as required. Fluent in Malayalam; proficiency in English is an advantage. Certification or training in culinary arts and food safety and sanitation practices. Strong communication and interpersonal skills, with the ability to work collaboratively with other team members. Physical stamina and ability to work in a fast-paced environment, including standing for extended periods and lifting heavy objects.
