Porotta Maker (or Porotta Master) is a specialized chef who makes authentic, flaky Kerala flatbreads. They mix the dough, roll it out, stretch it thin, and cook it on a hot flat iron (tawa). They need high speed to keep up with busy restaurant rushes.
