A Nikkala Master (or Nikkala) is a fast-paced, hybrid role common in Kerala and GCC restaurants. They bridge the kitchen and the dining area by taking prepared food from chefs, cross-checking bills for order accuracy, assembling food parcels, and managing front takeaway or beverage counters.
