As a Porotta Maker, you will be responsible for preparing high-quality porottas according to established recipes and procedures. Your primary duties will include dough preparation, rolling, shaping, and cooking porottas to perfection. Responsibilities: Dough Preparation: Mix flour, water, salt, and other ingredients to prepare porotta dough according to recipe specifications. Rolling and Shaping: Roll out the dough into thin, flat circles and shape them into layered discs. Cooking: Cook porottas on a hot griddle or tawa, ensuring they are evenly cooked and have the desired texture. Monitoring: Monitor the cooking process closely, adjusting temperature and cooking time as needed to achieve optimal results. Quality Control: Ensure that all porottas meet quality standards in terms of taste, texture, and appearance. Cleanliness: Maintain cleanliness and hygiene in the work area, including equipment and utensils. Efficiency: Work efficiently to meet production targets and customer demand, while minimizing waste. Collaboration: Coordinate with other kitchen staff to ensure smooth workflow and timely service. Compliance: Adhere to food safety and sanitation regulations at all times. Continuous Improvement: Stay updated on new techniques and trends in porotta making, and contribute ideas for process improvement. Requirements: Experience: Prior experience as a Porotta Maker or similar role is preferred. Skills: Proficiency in preparing and cooking porottas, with excellent dough handling and shaping skills. Knowledge: Understanding of traditional Kerala cuisine and porotta-making techniques. Attention to Detail: Ability to maintain consistency and quality in porotta preparation.
