We are currently seeking a skilled and experienced Porotta Maker to join our team in Palakkad. As a Porotta Maker, you will be responsible for preparing and cooking porottas to perfection, following traditional techniques and recipes. Responsibilities: Dough Preparation: Prepare dough for porottas by mixing flour, water, salt, and other ingredients according to the recipe. Knead the dough thoroughly to achieve the right consistency and texture. Rolling and Shaping: Roll out portions of the dough into thin, round discs using a rolling pin. Use traditional techniques to stretch and shape the dough evenly, achieving the characteristic layers and texture of porottas. Cooking Porottas: Cook porottas on a hot griddle or tawa, applying ghee or oil as needed to prevent sticking and enhance flavor. Flip the porottas regularly to ensure even cooking and achieve a golden brown color on both sides. Layering Technique: Master the art of layering porottas by folding and stacking them in a specific manner while cooking. Use techniques such as folding, pleating, and twisting to create layers and flakiness in the porottas. Timing and Temperature Control: Monitor the temperature of the griddle or tawa to ensure that porottas are cooked at the right temperature for the optimal duration. Adjust heat settings as needed to prevent burning or undercooking. Quality Assurance: Inspect porottas during the cooking process to ensure that they are cooked evenly and have the desired texture and appearance. Ability to work efficiently in a fast-paced kitchen environment while maintaining high standards of quality and consistency. Strong attention to detail and precision in porotta-making techniques, including layering and folding. Physical stamina and endurance to stand for extended periods and perform repetitive tasks. Excellent teamwork and communication skills, with the ability to collaborate effectively with kitchen staff and other team members.
