Job Summary: We are looking for a talented Porotta Maker to prepare and cook delicious porottas for our customers. The Porotta Maker will be responsible for making dough, rolling out porottas, and cooking them to perfection. This position requires precision, skill, and a passion for creating mouthwatering South Indian delicacies. Responsibilities: Prepare dough for porottas by mixing flour, water, salt, and other ingredients according to the recipe. Knead and shape dough into balls of uniform size for rolling out porottas. Roll out dough balls into thin, round discs using a rolling pin or porotta maker. Cook porottas on a hot griddle or tawa, flipping them until they are golden brown and evenly cooked. Brush porottas with ghee or oil to enhance flavor and texture. Monitor cooking temperatures and adjust heat as needed to prevent burning or undercooking. Ensure that porottas are cooked to the desired level of softness and flakiness. Stack cooked porottas neatly and keep them warm until serving. Maintain cleanliness and sanitation in the kitchen, including cleaning equipment and work surfaces. Collaborate with other kitchen staff to coordinate meal preparation and service. Requirements: Proven experience as a Porotta Maker or similar role in a restaurant or catering establishment. Thorough knowledge of porotta-making techniques, including dough preparation, rolling, and cooking. Skill in using traditional cooking equipment such as a griddle or tawa. Ability to work efficiently in a fast-paced kitchen environment. Attention to detail and commitment to quality in food preparation. Physical stamina and ability to stand for long periods and perform repetitive tasks. Good communication skills and ability to work well in a team. Flexibility to work shifts, including evenings, weekends, and holidays. Positive attitude and willingness to learn and adapt. Fluency in Malayalam; additional languages are a plus.
