We are currently seeking a skilled and experienced individual to join our team as a Tandoor Maker in Ernakulam. The Tandoor Maker will be responsible for preparing and cooking tandoori dishes, including bread, meats, and vegetables, in a traditional tandoor oven. This role requires expertise in Indian cuisine, knowledge of tandoor cooking techniques, and a commitment to quality and consistency. Responsibilities: Tandoor Cooking: Prepare marinated meats, seafood, and vegetables for cooking in the tandoor oven. Skewer marinated items onto metal or bamboo skewers and arrange them in the tandoor oven for cooking. Monitor the temperature of the tandoor oven and adjust as needed to ensure proper cooking and flavor development. Bread Making: Prepare dough for traditional Indian bread such as naan, roti, and kulcha. Stretch and shape the dough into flatbreads and place them onto the inner wall of the tandoor oven for baking. Monitor the baking process, flipping bread as needed to ensure even cooking and proper texture. Marinades and Sauces: Prepare marinades and sauces for tandoori dishes, ensuring proper seasoning and flavor balance. Marinate meats, seafood, and vegetables according to established recipes and guidelines. Quality Control: Ensure that tandoori dishes are cooked to perfection, with the right level of char and tenderness. Conduct quality checks on cooked items to ensure they meet standards for flavor, texture, and appearance. Address any issues or concerns regarding food quality or consistency promptly and professionally. Hygiene and Sanitation: Maintain cleanliness and organization in the tandoor cooking area, including the oven, utensils, and work surfaces. Adhere to food safety and sanitation guidelines, including proper handling and storage of ingredients, and regular cleaning and sanitizing of equipment. Requirements: Proven experience as a Tandoor Maker or Tandoori Chef in a restaurant or catering establishment, preferably specializing in Indian cuisine. Expertise in tandoor cooking techniques, including temperature control, skewering, and baking of bread and meats. Knowledge of Indian spices, marinades, and flavor profiles. Physical stamina and the ability to work in a hot and fast-paced environment. Attention to detail and the ability to follow recipes accurately. Good communication skills and the ability to work effectively as part of a team. Flexibility to work shifts, including evenings, weekends, and holidays, as needed.
