We are currently seeking a skilled and experienced South Indian Cook to join our culinary team. Responsibilities: Prepare and cook a variety of South Indian dishes, including dosas, idlis, vadas, sambar, rasam, chutneys, and traditional curries, ensuring that each dish is executed to perfection in terms of taste, texture, and presentation. Follow recipes, cooking techniques, and portion sizes specified by the head chef or kitchen supervisor to maintain consistency and quality standards in food preparation and service. Ensure cleanliness, hygiene, and food safety in the kitchen area, including food handling, storage, and sanitation practices, in compliance with health and safety regulations and company policies. Handle and store food ingredients and supplies properly, including fresh produce, spices, grains, lentils, dairy products, and meat or seafood, to minimize waste and maintain inventory levels. Monitor cooking temperatures, cooking times, and food quality throughout the cooking process, making adjustments as needed to achieve desired results and avoid overcooking or undercooking. Coordinate with other kitchen staff members, including assistant cooks, kitchen helpers, and dishwashers, to ensure smooth operation of the kitchen and timely preparation and delivery of food orders. Communicate effectively with servers, waitstaff, and food runners to prioritize orders, accommodate special requests or dietary restrictions, and ensure timely service and customer satisfaction. Assist in menu planning, recipe development, and food cost control initiatives, contributing ideas and suggestions for new dishes, seasonal specials, and promotional offerings. Clean and maintain kitchen equipment, utensils, and appliances, including grinders, mixers, stoves, ovens, and cookware, to prolong their lifespan and ensure optimal performance. Adhere to company policies, procedures, and standards of conduct, including grooming standards, attendance, punctuality, and teamwork, fostering a positive and professional work environment. Requirements: Proven experience as a South Indian Cook, Tiffin Master, or Dosa Chef in a restaurant or hotel kitchen, with a minimum of [insert number of years] years of culinary experience specializing in South Indian cuisine. In-depth knowledge of South Indian cooking techniques, ingredients, and spices, with the ability to prepare a wide range of authentic South Indian dishes from scratch. Effective communication and teamwork skills, with the ability to collaborate with kitchen staff and communicate with front-of-house staff to ensure smooth operations. Flexibility to work evenings, weekends, and holidays as needed, based on the demands of the restaurant business. Fluency in local language (Malayalam) required. Proficiency in English or other languages is a plus.
